Jon cooked up a storm in the kitchen last night -- Ecuadorian style! He said he ate this a lot on his mission and it was his favorite dish. His friend Eva made it for us when we traveled to Ecuador in 2007. It is basically a lentil soup with rice. It is so yummy! Very filling, too.
